Elderberry Gummies

Homemade gummies with a base of elderberry syrup are a delicious and fun way to support your family’s immune system. They also make a great potluck or birthday party item during cold season.  

Makes ~2 cups which turns out to about 24 heart gummies

Ingredients

1 Tablespoon coconut oil

1 cup elderberry syrup

¼ cup gelatin powder

½ cup hot but not boiling water

Silicone mold or glass pan

Instructions

1) Grease molds or glass pan with coconut oil to prevent sticking.

2) Place ¼ cup of elderberry syrup in a small bowl or glass measuring cup and quickly whisk in the gelatin powder.

3) Add the ½ cup of hot-ish (not boiling) water and stir quickly until smooth. Add the rest of the elderberry syrup and stir or whisk until completely smooth.

4) Pour into molds and refrigerate for 2 hours or until completely firm.

5) Pop out of molds or if using a glass pan, cut into cubes. Store in the fridge in an airtight container with parchment paper between layers.

Enjoy within one week
