Best Beets
My dad was known in our family for being a life-time beet hater. Do you have one in your family too? Well, it all changed when he and my stepmom came to stay with us for an extended visit to escape the snow.
We love beets in our house. They are full of color (hello antioxidants) & sweetness and they are one of your liver's besties. They help clean the gunk from your bile...which makes it easier to digest your fats...um yes please. AND...they support healthy blood pressure even though they are sweet...how cool is that?!

Ingredients
2-3 beets sliced 1/4” wide so they are round
1 Tbsp extra virgin olive oil
Herbes de Provence or basil, oregano & thyme
salt
2 cups chopped beet greens
1 clove finely chopped garlic
1/4 cup water
a generous squeeze of lemon
Instructions
Heat oven to 375 degrees F.
Lay your sliced beets out evenly on a sheet pan or large glass dish.
Drizzle with extra-virgin olive oil. Sprinkle with Herbes de Provence and salt.
Flip the beets and move around to evenly coat the beets with the oil mix.
Bake for 25-30 minutes or until beets are soft to the poke.
For the beet greens, heat a medium size pan on low to medium heat.
Add a small drizzle of extra-virgin olive oil. Lightly sauté the garlic for 1 minute.
Add the chopped beet greens and stir well to coat with the oil and garlic.
Add 1/4 cup water and cover with a lid. Steam for a few minutes until greens are soft.
Stir and add a squeeze of lemon juice.
Pairs well with just about everything and also delicious all on their own!
