Vegan Fudge Truffles

Ingredients makes ~16 truffles

1/2 cup cashew or almond butter

1/4 cup cacao butter or coconut butter

3 Tbsp ghee or extra cacao butter

3-4 Tbsp maple syrup

2 tsp vanilla

1/4 tsp salt

1/2 cup cacao powder

Optional toppings: cacao nibs, dried rose petals, chopped dried figs

Instructions

Use a double boiler set-up or if you don’t have that you can also just use a large pot with a 4 cup size measuring cup. Boil about 3 inches of water in the pot. Melt the cashew butter, cacoa butter, ghee, maple syrup, vanilla and salt together in the measuring cup or top pot of your double boiler.

Stir well. Let it sit until the butters are completely dissolved.

Add the cacoa powder and stir well until the mix is evenly distributed and smooth.

Pour the chocolate into a silicone mold or use a parchment lined dish.

Refrigerate until the truffles are solid. If you used a parchment lined dish, pull the chocolate block out and chop into 1-2” pieces.

Store in the refrigerator.
