Maple Ginger Veggies

This recipe is so simple you might pass over it…sooooo I made this little video (less than 2 min) to entice you! click image to view

You can seriously eat a whole bowl of these veggies and call it dinner. For a heartier meal, serve it over rice, pasta or kitchari. Add some chicken or salmon for a solid lunch.

Ingredients

2 cups chopped veggies

1 cup chopped kale de-stemmed

1 tsp ghee

1 Tbsp chopped ginger

1-2 tsp maple syrup

1/2 cup water

Roasted pumpkin or sunflower seeds

Instructions

Heat a pan on low/med heat. Melt the ghee. Add the ginger and sauté for 30 seconds. Add the chopped veggies and stir until they are all lightly coated with ghee. Add 1/4 cup water and bring to a boil on high heat. Turn down the heat to low and simmer with a lid for 7 minutes. Add maple syrup, kale and 1/4 cup water if the pan is getting dry. Cover and steam for one minute. Top with seeds.

Enjoy these veggies on their own as a light dinner or as a topping for rice, dhal or kitchari. For a heartier meal, add chicken or salmon.
